Chocolate Chip Shortbread (via Fat Mum Slim)

Ingredients

220g chilled unsalted butter, chopped
2 cups plain flour
1/2 cup rice flour
2/3 cup caster {superfine} sugar
1 teaspoon vanilla extract
1 egg
200g dark chocolate, chopped

Method

♥ Preheat the oven to 160 degrees celcius. Prepare a slice tin by lining it with baking paper.
♥ Place the butter, plain flour, rice flour, sugar, vanilla and egg into a food processor or Thermomix and process for 3-5 minutes or until the mixture starts to come together.
♥ Lightly flour a clean bench space and turn the dough out onto it. Knead gently, and then add the chocolate in and knead a little more until combined.
♥ Press the mixture into the prepared tin and smooth over. I use the back of a clean spoon for this.
♥ Use a sharp knife to score the top into long bars. This makes it easier to cut once cooked. Prick with a fork as well.
♥ Bake for 40-45 minutes or until the top is lovely and golden.
